Apple Cheesecake Bars

I tend to be a cheesecake snob but with good reason. My friend (more like my brother from another mother) Shaun has had me addicted to his Turtle Cheesecake since high school. I tried eating The Cheesecake Factory’s cheesecake after having his and was beyond disappointed. My husband hates cheesecake but he’ll eat Shaun’s. He made us little mini turtle cheesecakes for our gender reveal party a couple of years ago and all of our friends and family members swooped in like savages to get one. I didn’t even get one. LOL. So believe me when I tell you, his cheesecake is heavenly. If you’re ever in Hattiesburg, Ms you’ve got to visit Cotton Blues (he’s the Pastry Chef there) and try a piece of cheesecake. The other food there is great too but his cheesecakes are the things dreams are made out of.

Although Shaun refuses to share his recipe with anyone, (Including me, his trustworthy, loyal,sister from another mister, and long time friend) I thought I’d give a cheesecake recipe a try. Now I knew I wasn’t going to attempt to try to make a traditional cheesecake.  I decided to make Apple Cheesecake Bars instead and they taste pretty great!! So today I’m going to show you how to make Apple Cheesecake Bars.


Here’s What You’ll Need:


2 1/2 Cups of All Purpose Flour

1/2 Cup of Brown Sugar, Packed

1/4 Teaspoon of Salt

1 Cup (2 sticks) of Butter, Softened

2 8oz Packs of Cream Cheese Softened

1/2 Cup and 2 Tablespoons of Sugar

1 Table Spoon of Cinnamon

1 Teaspoon of Pure Vanilla Extract

4 Apples of your choosing, cored and chopped up ( I used granny smith apples)


2/3 Cup of Rolled Oats

2/3 Cup All Purpose Flour

1/2 Cup of Brown Sugar, Packed

1/4 Teaspoon of Salt

1/4 Teaspoon of Cinnamon

6 Tablespoons of Butter


First you’ll need to preheat your oven to 350 degrees. Grab a 13×9 inch pan and spray it  with nonstick spray, then set it aside.

In a large bowl combine the flour, brown sugar, and salt. Using a pastry blender or a fork, cut in the 2 sticks of butter until the mixture is crumbly. When you’ve done that pour the flour mixture in the pan. Press it evenly in the pan. Bake it for 15 minutes or until the edges are brown.

Next using an electric mixer, mix the cream cheese until it’s creamy. Once the cream cheese is smooth, slowly add in the 1/2 cup of sugar, eggs, and pure vanilla extract. When all of the ingredients are completely combined, pour the cream cheese mixture over the warm crust.

Then place the chopped apples in a small bowl. Add in the cinnamon and 2 tablespoons of sugar. Stir until all of the apple pieces are covered. Then spoon the apple mixture on the cream cheese mixture. Set aside.

In a medium sized bowl stir the rolled oats, flour, brown sugar, salt and cinnamon. Using a fork or pastry blender cut in the butter until the mixture is crumbly. (I call my pastry blender a “Butter Cutter”) Then sprinkle the oat mixture over apples and bake for 35-40 minutes.

Here’s the part where I should tell you to let it cool a couple of hours before cutting it but who really wants to wait that long. lol So cut it whenever you like and enjoy!!
